I would choose peach and terra cotta with white accents.

knowing me i would paint every wall a different color pink!

the counter and any other wood products should be high grade maple or ash with a laqured finish,,walls ,a light shade of grey and carpet a charcoal color,this will make the wood the main feature while maintaining a clean subtle look,this scheme will also allow any lighted display cases to blend in well and allow the halogen lights in the display cases to feature the giftware and not appear clutteres.Upscale in this area usually means clean lines and a soft minimalist look.I am a painting contractor and just finished working with a designer on an upcoming salon/spa and these are the colors she chose,she also added small hints of color in the art she chose for the walls.some hints of fall type colors.
I would go with something contemporary and make sure it looks expensive even if you dont spend alot. there are tricks you can do google it.
Because the cosmetic colors change with the seasons keep the shop colors simple. Classic white works with all seasons. Use mixed woods for interest. A varied wood floor and classic furnishings would compliment the overall apperance. Use tinted glass to add a bit of color to the shelfs... Spend more time, $ , and focus on the lighting! Michele
